Position Summary
Reporting to the Production Manager/Supervisor, the Lead Trainee will be responsible for the day-to-day operations for the Milling area/Dehydration process.
The ideal candidate will have the responsibility to achieve productivity, efficiency, cost, quality, and safety objectives through both individual and team contributions. Provides direction, leadership, development, and support to associates through empowerment, teamwork, continuous improvement projects and initiatives. Promotes safe work practices and develops and maintains an effective organization with qualified personnel.
Position Responsibilities
- Advising Management of manpower needs.
- Assist in finding coverage for all scheduled and unscheduled absences.
- Assist in the orientation of new and returning employees.
- Assist in training of all employees.
- At 12:00 am responsible for ensuring that weight certificates and truck manifest match raw material receiving log for the 24-hour period.
- At the beginning of each shift ensure that the Centerline check sheet is completely and accurately filled out with information obtained from the panel view and the recorders.
- Check product for color and moisture every ½ hour to ensure quality standards are consistently met.
- Communicate with lab every 2 hours to verify that color and moisture of product is within specification.
- Communicate with Q.A. should there be any product issues. (Dehydration and Mill area)
- Conduct departmental informational meetings.
- Responsible for ensuring that each spout location has a Mill Monitoring and Verification Checklist, as well as verifying and signing off that each Spout Attendant is properly filling out required information in a timely manner.
- Responsible for ensuring the net drum weight for each product is within their required specified weights.
- Ensure Food Safety by performing required checks and documentation.
- Ensure that all assigned monthly compliance check sheets are completed in a timely manner.
- Ensure that that Mill has sufficient product labels for daily operation.
- Ensures all indirect materials are available as needed to maintain production schedule.
- Fill up 1-gallon jugs with Sanitizer (Quat DS) and Enforcer.
- Identifies all issues in the milling process and resolves issues in a timely manner.
- Identifies all issues in the production process and resolves issues in a timely manner.
- Instruct employees on their prospective job assignments based on quality and quantity of product being produced.
- Maintain standards of cleanliness and equipment efficiency.
- Make adjustments to equipment should quality be out of specification as notified by Q.A.
- Make work assignments within own shift.
- Manages Mill staff to attain Mill and quality goals.
- Manages production staff to attain production and quality goals.
- Monitor and change all charts in the department. (12 am midnight).
- Monitor and ensure that all equipment is working properly and that any issues that cannot be resolved are reported to maintenance in a timely manner.
- Monitor and record exhaust fan temperature readings on an hourly basis.
- Monitor Bry-Air system verifying that the coils are not leaking, and the filters are clean and in good working order.
- Monitor the flow of product from slicers to A, B & C belts ensuring adequate bed depth and even distribution is achieved.
- Monitor operation and make recommendations allowing department to safely operate at maximum efficiency with a focus on quality.
- Monitor the timeliness of breaks and lunches.
- On Sanitation Day start wash down procedure beginning at the un-loader area and continuing on to Wet Prep area.
- During wash down, the “day shift” lead is responsible for performing “Mill Downtime inspection” form.
- Orientation of new employees on their shift.
- Perform daily sanitation inspection at the beginning of each shift and complete the “Master Sanitation Schedule (MSS) – Prep and Dehy” form.
- Perform Mill color sorter checks every “4 hours” and complete “Mill Color Sorter Checks” form.
- Perform other duties as assigned.
- Perform routine checks on dryers (exhaust fans, coils, fishers, drive chains, travel guards, dryer doors, thermometers, and damage, etc.) to ensure they are all in good working order.
- Record all pertinent information during daily operation in Logbook so that all issues or information is clearly communicated to oncoming shift Lead, Maintenance workers, Mill Lead workers, and all members of Management.
- Record results in the “Mill Lead Tools Daily Inventory” Form
- Refer to Management any cases requiring disciplinary action.
- Regularly communicate all issues verbally or by email to the appropriate personnel
- Regularly communicate any issues, department goals and pertinent information to employees.
- Regularly communicate feed rate, change over, wash down procedures, maintenance issues, personnel issues, and safety concerns with Line Operators.
- Regularly monitor and calibrate weigh scales on each shift to ensure proper weights are achieved.
- Report any employee issues in regard to performance to Management using the “Employee Documentation” Form.
- Report to Management any employees work performance issues.
- Represent Management in their absence and ensure that they are contacted should an issue or incident arise requiring their immediate attention.
- Responsible for all aspects of production flow from unloader to the Mill.
- Responsible for creating an engaged and team-oriented work force.
- Responsible for ensuring that all emergency evacuation procedures are followed, and all employees accounted for.
- Responsible for filling out “Processing Down-time Tracking” form should there be any interruption or down time in the operation.
- Responsible for lock out and securing all equipment in the department for repairs and cleaning.
- Responsible for maintaining a positive and safe work environment.
- Responsible for populating Daily Variance Report (kilowatts, water usage, dryer pounds, loads per day, etc.) at 12:00 am each day.
- Responsible for training personnel on the emergency shutdown procedure.
- Schedule, approve and manage all time off requests.
- Supports continuous improvement goals in safety and quality.
- The “day shift” Lead Worker is responsible for all aspects in the preparation of the weekly wash down to be performed.
- Tie off the entire area to be washed down with red caution tape.
- The “night shift” Lead Worker will be responsible for monitoring inventory of Sanitizer (Quat DS) and Enforcer.
- The Mill lead on each shift will be responsible for keeping track of product spillage, scrap and metal detector reject pounds.
- Train employees of their shift in job duties.
- Troubleshoot equipment issues.

Position Requirements
- Ability to effectively communicate with co-workers, management, department Leads and carriers.
- Ability to stand on feet for extended periods of time.
- Ability to take direction and work in a team driven atmosphere.
- Ability to wear all appropriate PPE.
- Ability to wear and use all assigned personal protective equipment (hard hat, gloves, eye protection, ear plugs and steel toe footwear/nonslip, etc.)
- Ability to work in fast paced and noisy production environment.
- Ability to work overtime and other shifts as needed.
- Ability to work overtime as required.
- Ability to work well under pressure and make difficult decisions during critical situations.
- Basic mechanical knowledge of the processing and Dehy areas.
- Basic mechanical knowledge of the processing and Mill areas.
- Bilingual preferred.
- Capable of lifting 50 lbs. consistently throughout a shift.
- Capable of operating all equipment and machinery required of the job.
- Good communication and interpersonal skills.
- Knowledge of basic mathematics and measurement principles.
- Must be able to acceptably communicate in the English language.
- Must be able to effectively communicate in English. Bi-Lingual Spanish preferred.
- MUST be available to work extended days and hours during the production season (approximately May through October).
- Must be self-motivated and have willingness to learn.
- Must have high school diploma, GED, or equivalent education.
- PC knowledge helpful.
- Strong team player - good communication (written and verbal), follow-up skills, attention to detail and the ability to train others in all applicable warehouse functions.
- Successful Completion of Powered Industrial Truck Certification Training.
- Understand and follow all Good Manufacturing Practices, and Safety regulations.
